I tried this: October 2013

Alterations: I left out the celery and thyme, because I don’t really like either in soups. I also substituted chicken broth for the vegetable broth that was called for, since I already had it in the pantry. Finally I roughly tripled the amount of cheese in the soup, because we love cheese and that’s all there is to it.

Thoughts: For a soup with no cream, no meat and no noodles, this soup is exceptional. It is hearty, flavorful and especially filling when paired with some crusty bread. This soup can stand alone, but I dipped breaded chicken into mine, and my husband ate his with a hot-off-the-grill brat. This soup is a new fall fave for our family!


  1. I heartily agree with adding more cheese. Makes any recipe better! Any idea how this compares to the Panera broccoli cheddar soup? Sometimes that soup is one of the only things that sounds appealing when I feel like eating. Might be more cost effective (for me, not Panera) to make a similar one myself!

    • This soup is on par (if not better than) brocolli cheddar, IMHO. It mostly smooth (depending on how long you puree) and cheesy (if you’re like me and add enormous handfuls and then top with cheese), but not creamy cheesy the way broccoli cheddar is. And it’s really good with Ritz crackers or crusty bread. You should at least try it once. I don’t think it would make you barf.
