I tried this: June 2012
Alterations: I used closer to 3/4 tsps of vanilla and a 1/2 to 1 tsp of lemon juice to kick it up a notch. I replaced blackberries for blueberries.
Thoughts: A fabulous, festive version of Skinny Taste‘s cheesecake yogurt cupcake (I’ve also make the lemon and pumpkin versions). They were a big hit at our Memorial Day BBQ with friends. The cheesecake is smooth and creamy and definitely doesn’t taste low-fat. The fruit adds a really nice, tart sweetness. The leftovers keep best in the fridge in a freezer ziploc and taste the best at 10PM, right before bed. These will be my new go-to patriotic treat!
